Our chef Giovanni Palladino used to work as a waiter in a restaurant in the nearby town of Castellina – and loved to talk about the dishes he prepared at home.
Because these stories made our mouth water, we booked him for a test dinner without further ado. Lo and behold: the menu was really as good as he had promised: a culinary reflection of the region and the season, down-to-earth, but also imaginative and sophisticated.
